  • Chilled green Salmorejo soup flavoured with Anise and served with Mozzarella and a Granité of Vermouth, drizzled with a Lime and Sundried Tomato dressing

  • Carpaccio of Bolete mushroom accompanied by Wheat-berry Stew with Mushrooms and garden Asparagus
  • Seared Tuna with Seaweed Hummus served with Wasabi ice cream and Aguachile
  • Slow cooked Secreto Ibérico pork, lacquered with a bitter Orange sauce, served with a Parmentier of Avocado and Potato
